Your Agni is your digestive ability - it keeps you alive and well.
One of the most important concepts in Ayurveda is that of AGNI (Digestive ability) the fire in your belly and even in your deeper body tissues, like your muscle metabolism. Agni is even present when sounds are processed from your ears to your brain!
The quality and ability of Agni is fundamental to your healthy life. It makes nutrients available from the food you eat and processes every substance coming into your system through your five senses. If you can't deal with what's coming in completely and eliminate the waste, then Ama, toxic residue or pathogens, are left behind. This is where disease begins. If your Agni is too high from acidic, hot, stimulating aggravators then it can burn your food too quickly, it'll pass too quickly out of your body without the time to absorb nutrients and a loose stool results, a rash and maybe impatience!
If your Agni is dampened by heavy, cool, dull aggravators then it can't metabolise your food and it sits, ferments or putrefies, moves slowly through your guts and you can't get all the available nutrients from it because the foods not broken down enough, a heavy stool results, a respiratory condition and maybe lethargy.
If your Agni is irregular from dry, cold, agitated aggravators then it won't digest your meals completely through the day, the food passes sporadically through your gut and nutrients can't get absorbed into your blood stream because it's rough and dry in your gut and so is the food! Constipation or irregularity of stools results, a pain in your body and maybe insomnia.

Ayurvedic health science doesn't focus on singular vitamin and mineral needs to bring your health back. The complexity of this area makes it fraught to isolate interrelated nutrients. The macro-nutrients (fat, protein, carbohydrates and fibre) fall under a similar perspective in Ayurveda. Ayurveda looks to the taste (initial, digestive and post-digestive) of your food, the state of your digestive ability and properties of your food, like is it dry and rough or moist and soft.
When you eat a meal of all 6 tastes (sweet, sour, salty, bitter, astringent and pungent) you'll cover your vitamin and mineral needs. When you allow a 5-6 hour space between meals without snacking and eat easily digested food you're improving your Agni simultaneously, which prevents illness reoccurring. Allow your Agni to get stoked!
