Crispy outer layer and a soft sweet inner layer, perfect with that afternoon cup of chai!
2 heaped tbsp butter of choice (we used a vegan one!)
1/2 Cup raw caster sugar
1 large flax egg (1tbsp flax meal mixed with 1.5 tbsp water. Sit aside to thicken)
1 inch grated ginger
1 1/2 Cups organic unbleached plain flour
1 tsp baking powder
1 tsp cinnamon
Preheat oven to 180 degrees Celcius. Mix the nuttellex, sugar and flax egg until creamy. Grate in the ginger and mix. Once combined, add the flour, baking powder and cinnamon.
Take 1 tbsp of the mixture and roll into ball repeat for the rest of the mixture. Place on a tray lined with baking paper and lighty press down on each ball. Place in oven for 15 minutes. remove and place on cooling rack.
